Philosophy

“The menu is not written until the morning. It cannot be. The field writes it first, then the season, then the light. I only transcribe.

Trained under Michel Bras in Laguiole, then three years with Arzak in San Sebastián, before London claimed her. She opened NOCTURNE with a philosophy that is still unusual in its restraint: no foam, no theatre for its own sake, no borrowed technique without a reason. Every plate must justify the silence around it.

Seasonal vegetables from a regenerative farm — earthy roots and herbs

The farm

Flour, roots, and alliums from Slade Farm in the Cotswolds — thirty miles away. We have worked with the same family since we opened. What they grow determines what we cook.

The water

Line-caught from the Cornish coast, landed at Newlyn before dawn. No farmed fish appears on the menu. Seasons dictate the plate, not the other way around.

Every bottle is sourced directly from estates. We taste before we list. The wine list is half the size it could be — and twice as honest.

One sitting.
One menu.
No exceptions.

We seat forty covers. Élodie cooks a single tasting menu each evening, shaped by that morning's arrivals. There is no à la carte, no substitutions by preference, and no dish repeated from the evening before.

If you cannot eat something — truly cannot, for a medical reason — we will accommodate that, and you will tell us well in advance. The rest is trust. That is what dining here asks of you.
